A comforting twist on traditional lasagna, this White Lasagna Soup is easy to prepare, packed with flavor, and perfect for chilly days.
Ingredients
- 1 lb ground meat (beef or Italian sausage)
- 8 oz lasagna noodles, broken into pieces
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh parsley for garnish
Instructions
- In a large pot, brown the ground meat over medium heat. Add the diced onion and minced garlic, cooking until softened.
- Stir in the Italian seasoning, salt, and pepper.
- Add the chicken or vegetable broth and bring to a boil.
- Add the broken lasagna noodles and cook according to package instructions.
- Once the noodles are tender, reduce heat and stir in the heavy cream and ricotta cheese.
- Allow the soup to simmer for a few minutes until creamy.
- Serve hot, topped with shredded mozzarella and garnished with fresh parsley.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat on the stove with additional broth or cream if needed.
