Description

Delightful and soft sugar cookie bars perfect for Valentine’s Day celebrations, easy to cut and serve.


Ingredients

  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 2 tbsp brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1 and 1/4 cup all-purpose flour
  • 1/4 tsp salt
  • 4 tbsp butter (salted or unsalted, softened)
  • 1 tsp vanilla extract (for frosting)
  • 2 tbsp heavy cream
  • 1 cup powdered sugar
  • Valentine’s Day sprinkles
  • Pink gel food coloring (optional)
  • Purple gel food coloring (optional)


Instructions

  1. Preheat the oven to 350°F and line an 8×8 baking pan with parchment paper or foil.
  2. In a large bowl, cream the butter, granulated sugar, and brown sugar until smooth and creamy. Add the egg and vanilla extract, mixing to combine.
  3. Mix in the flour, baking powder, and salt until just combined. Spread the batter into the prepared pan and bake for 15 minutes.
  4. In another bowl, whip the softened butter and powdered sugar until combined.
  5. Add the heavy cream and vanilla, whipping until light and fluffy.
  6. Divide the frosting into two bowls, coloring one with pink gel food coloring and the other with purple.
  7. Frost the cooled cookie bars with dollops of both frosting colors and top with sprinkles.
  8. Slice and serve, or chill to set the frosting before enjoying.

Notes

Ensure butter is softened to room temperature for easy mixing. Allow bars to cool completely before frosting.
