Delightful and soft sugar cookie bars perfect for Valentine’s Day celebrations, easy to cut and serve.
Ingredients
- 1/2 cup butter
- 1/2 cup granulated sugar
- 2 tbsp brown sugar
- 1 large egg
- 2 tsp vanilla extract
- 1/2 tsp baking powder
- 1 and 1/4 cup all-purpose flour
- 1/4 tsp salt
- 4 tbsp butter (salted or unsalted, softened)
- 1 tsp vanilla extract (for frosting)
- 2 tbsp heavy cream
- 1 cup powdered sugar
- Valentine’s Day sprinkles
- Pink gel food coloring (optional)
- Purple gel food coloring (optional)
Instructions
- Preheat the oven to 350°F and line an 8×8 baking pan with parchment paper or foil.
- In a large bowl, cream the butter, granulated sugar, and brown sugar until smooth and creamy. Add the egg and vanilla extract, mixing to combine.
- Mix in the flour, baking powder, and salt until just combined. Spread the batter into the prepared pan and bake for 15 minutes.
- In another bowl, whip the softened butter and powdered sugar until combined.
- Add the heavy cream and vanilla, whipping until light and fluffy.
- Divide the frosting into two bowls, coloring one with pink gel food coloring and the other with purple.
- Frost the cooled cookie bars with dollops of both frosting colors and top with sprinkles.
- Slice and serve, or chill to set the frosting before enjoying.
Notes
Ensure butter is softened to room temperature for easy mixing. Allow bars to cool completely before frosting.
