Description

Deliciously soft cookies with a chocolate base and elegant pink cookie, filled with rich ganache, perfect for special occasions.


Ingredients

  • ½ cup (113 g) unsalted butter, softened
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (125 g) all-purpose flour
  • ½ cup (45 g) unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon espresso powder (optional)
  • ½ cup (113 g) unsalted butter, softened (Pink)
  • ½ cup (100 g) granulated sugar (Pink)
  • ½ cup (100 g) brown sugar (Pink)
  • 1 large egg (Pink)
  • 1 teaspoon vanilla extract (Pink)
  • 1½ cups (190 g) all-purpose flour (Pink)
  • ½ teaspoon baking soda (Pink)
  • ¼ teaspoon salt (Pink)
  • 23 teaspoons freeze-dried raspberry powder or pink food coloring
  • ½ cup (120 ml) heavy cream (Ganache)
  • ¾ cup (130 g) dark or white chocolate chips, finely chopped (Ganache)
  • 1 tablespoon (14 g) butter (optional, Ganache)
  • Freeze-dried raspberries (Toppings)
  • Chocolate squares (Toppings)
  • Heart sprinkles (Toppings)
  • Melted white chocolate for drizzling (Toppings)


Instructions

  1. Prepare each dough flavor separately. In a bowl, cream together the butter and sugars for each dough.
  2. Add the egg and vanilla to each mixture, then stir in the dry ingredients.
  3. Chill both doughs in the refrigerator for 30 minutes.
  4. Scoop the dough into balls and press a well in the center of each.
  5. Bake at 350°F (175°C) for 10–12 minutes. After baking, re-press the centers if needed.
  6. Cool the cookies completely.
  7. To make the ganache, pour hot cream over the chopped chocolate. Stir until smooth.
  8. Fill the centers of the cookies with ganache and decorate with your choice of toppings.
  9. Let the ganache set at room temperature or chill briefly before serving.

Notes

Store the cookies in an airtight container at room temperature for up to a week. For longer storage, refrigerate for up to two weeks and bring to room temperature before serving.
