Description

Delicious chicken enchiladas that are quick and easy to prepare, perfect for busy weeknights or casual gatherings.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 can (10 oz) enchilada sauce
  • 8 small flour or corn tortillas
  • 1/2 cup diced onions (optional)
  • 1/2 cup chopped cilantro (optional)
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the shredded chicken, half of the cheese, and some enchilada sauce.
  3. Take a tortilla, fill it with the chicken mixture, and roll it up.
  4. Place the rolled tortillas seam side down in a baking dish.
  5. Pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
  6. Bake for 25 minutes until the cheese is bubbly and golden.
  7. Serve hot, garnished with onions and cilantro if desired.

Notes

Use rotisserie chicken for an even faster option. Customize the filling with more vegetables like bell peppers or spinach if desired.
