Description

A fun and customizable dish combining the flavors of tacos into a satisfying rice bowl.


Ingredients

  • 1 cup rice
  • 1 lb ground beef or chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • Fresh cilantro (optional)
  • Avocado or guacamole (optional)
  • Sour cream (optional)


Instructions

  1. Cook rice according to package instructions.
  2. In a large skillet, brown the ground beef or chicken over medium heat.
  3. Drain any fat, then add the black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine and heat through.
  4. Once the rice is cooked, assemble the Taco Rice Bowls by layering rice, the meat mixture, and toppings such as cheese, avocado, sour cream, and cilantro.
  5. Serve immediately and enjoy!

Notes

For a healthier option, use brown rice. Customize with additional veggies or proteins as desired.
