A fun and customizable dish combining the flavors of tacos into a satisfying rice bowl.
Ingredients
- 1 cup rice
- 1 lb ground beef or chicken
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 packet taco seasoning
- 1 cup shredded cheese
- Fresh cilantro (optional)
- Avocado or guacamole (optional)
- Sour cream (optional)
Instructions
- Cook rice according to package instructions.
- In a large skillet, brown the ground beef or chicken over medium heat.
- Drain any fat, then add the black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine and heat through.
- Once the rice is cooked, assemble the Taco Rice Bowls by layering rice, the meat mixture, and toppings such as cheese, avocado, sour cream, and cilantro.
- Serve immediately and enjoy!
Notes
For a healthier option, use brown rice. Customize with additional veggies or proteins as desired.
