Ingredients

  • 12 jumbo pasta shells
  • 1 lb ground beef or turkey
  • 1 cup salsa
  • 1 can (15 oz) diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning

  • Chopped green onions (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to package instructions until al dente; drain and set aside.
  3. In a skillet, brown the ground beef or turkey over medium heat until fully cooked; drain excess fat.
  4. Stir in the taco seasoning, salsa, and diced tomatoes. Cook for a few minutes until heated through.
  5. Stuff each pasta shell with the taco meat mixture and place in a baking dish.
  6. Top with shredded cheese and bake in the preheated oven for about 20 minutes or until the cheese is bubbly and golden.
  7. Garnish with chopped green onions if desired and serve hot.

Notes
