Ingredients
- 12 jumbo pasta shells
- 1 lb ground beef or turkey
- 1 cup salsa
- 1 can (15 oz) diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- Salt and pepper to taste
- Chopped green onions (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the jumbo pasta shells according to package instructions until al dente; drain and set aside.
- In a skillet, brown the ground beef or turkey over medium heat until fully cooked; drain excess fat.
- Stir in the taco seasoning, salsa, and diced tomatoes. Cook for a few minutes until heated through.
- Stuff each pasta shell with the taco meat mixture and place in a baking dish.
- Top with shredded cheese and bake in the preheated oven for about 20 minutes or until the cheese is bubbly and golden.
- Garnish with chopped green onions if desired and serve hot.
Notes
Experiment with different kinds of cheese and add black beans or corn for extra texture.
