Description

Delicious cookies combining rich chocolate with the sweet flavor of freeze-dried strawberries, perfect for any occasion.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 3/4 cup Dutch processed cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon espresso powder
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 tablespoon pure vanilla extract
  • 1 1/2 cups freeze-dried strawberries
  • 1 cup semi-sweet chocolate chips
  • 1 cup chocolate chunks
  • Flaky sea salt


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and espresso powder.
  3. Cream the softened butter with both sugars in a stand mixer until smooth.
  4. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  5. With the mixer off, add the dry ingredients and mix on low until combined.
  6. Stir in freeze-dried strawberries, chocolate chips, and chocolate chunks by hand.
  7. Form dough balls and place them on the prepared baking sheet.
  8. Bake for 10 to 14 minutes, then sprinkle with flaky sea salt after baking.
  9. Let the cookies sit for 5 minutes before transferring to a cooling rack.

Notes

For best results, ensure butter is softened but not melted. You can adjust the cocoa powder for a richer chocolate flavor.
