Ingredients
- 2 1/4 cups all-purpose flour
- 3/4 cup Dutch processed cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon espresso powder
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 2 large eggs
- 1 tablespoon pure vanilla extract
- 1 1/2 cups freeze-dried strawberries
- 1 cup semi-sweet chocolate chips
- 1 cup chocolate chunks
- Flaky sea salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and espresso powder.
- Cream the softened butter with both sugars in a stand mixer until smooth.
- Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
- With the mixer off, add the dry ingredients and mix on low until combined.
- Stir in freeze-dried strawberries, chocolate chips, and chocolate chunks by hand.
- Form dough balls and place them on the prepared baking sheet.
- Bake for 10 to 14 minutes, then sprinkle with flaky sea salt after baking.
- Let the cookies sit for 5 minutes before transferring to a cooling rack.
Notes
For best results, ensure butter is softened but not melted. You can adjust the cocoa powder for a richer chocolate flavor.
