Description

A quick and healthy spaghetti dish featuring garlic and fresh spinach, perfect for busy weeknights.


Ingredients

  • 3 tbsp olive oil
  • 45 cloves garlic, thinly sliced
  • 56 cups fresh baby spinach, chopped
  • 8 oz spaghetti
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Juice of 1/2 lemon (optional)


Instructions

  1. Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Heat olive oil in a skillet over medium heat. Add sliced garlic and sauté until golden and fragrant, about 1–2 minutes.
  3. Add spinach and cook until just wilted, about 1–2 minutes.
  4. Add cooked spaghetti and reserved pasta water to the skillet. Toss to coat.
  5. Season with salt, black pepper, and red pepper flakes if using.
  6. Top with Parmesan and a squeeze of lemon, if desired. Serve warm.

Notes

Make sure not to overcook the garlic; it should be golden, not brown, to avoid a bitter taste. Use fresh baby spinach for the best flavor.
