Description

A delicious and easy slow-cooked meal with bright, fresh flavors that brings comfort to your dinner table.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 2 cups cooked rice
  • Fresh herbs for garnish (parsley or cilantro)


Instructions

  1. In a slow cooker, combine lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper.
  2. Add the chicken breasts to the slow cooker and pour the chicken broth over everything.
  3. Cover and cook on low for 240-360 minutes or until chicken is cooked through.
  4. Remove the chicken, shred it with two forks, and return it to the slow cooker to mix with the juices.
  5. Serve over fluffy rice and garnish with fresh herbs.

Notes

For a stronger lemon flavor, add more lemon juice or some lemon zest. Feel free to add diced vegetables for texture.
