Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup chicken broth
- 2 cups cooked rice
- Fresh herbs for garnish (parsley or cilantro)
Instructions
- In a slow cooker, combine lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper.
- Add the chicken breasts to the slow cooker and pour the chicken broth over everything.
- Cover and cook on low for 240-360 minutes or until chicken is cooked through.
- Remove the chicken, shred it with two forks, and return it to the slow cooker to mix with the juices.
- Serve over fluffy rice and garnish with fresh herbs.
Notes
For a stronger lemon flavor, add more lemon juice or some lemon zest. Feel free to add diced vegetables for texture.
