A delicious and healthy meal combining tender BBQ chicken, creamy cottage cheese, and fresh veggies.
Ingredients
- 2 boneless, skinless chicken breasts (6-8 oz each) or 1.5 lbs chicken thighs
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- ¼ tsp black pepper
- ¼ tsp sea salt
- ½ cup BBQ sauce
- 2 cups (16 oz) cottage cheese (2% or 4%)
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- ½ English cucumber, diced
- ¼ red onion, thinly sliced
- ½ cup corn kernels
- 1 ripe avocado, diced
- ½ cup black beans, rinsed and drained (optional)
- ¼ cup light mayonnaise or plain Greek yogurt
- 2 tbsp BBQ sauce
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp honey or maple syrup
- ½ tsp garlic powder
- ¼ tsp black pepper
- Pinch of cayenne pepper (optional)
- Fresh cilantro, chopped (garnish, optional)
- Fresh chives, snipped (garnish, optional)
- Extra smoked paprika (garnish, optional)
- Hot sauce (garnish, optional)
Instructions
- Pat chicken dry and season with garlic powder, onion powder, smoked paprika, black pepper, and sea salt.
- Heat olive oil in a skillet over medium-high heat and sear chicken for 5-7 minutes on each side until golden (or bake at 400°F for 20-25 minutes).
- Let the chicken rest for 5-10 minutes before shredding or dicing.
- Toss the shredded chicken with BBQ sauce until coated.
- Divide cottage cheese between two large bowls and arrange mixed greens, cherry tomatoes, cucumber, red onion, corn, and optional black beans over the cottage cheese.
- Whisk together mayonnaise/Greek yogurt, BBQ sauce, vinegar, mustard, honey/maple syrup, garlic powder, black pepper, and optional cayenne until smooth.
- Spoon the saucy BBQ chicken and diced avocado over the bowls and drizzle with the creamy BBQ dressing. Garnish as desired and serve immediately.
