Description

Juicy and flavorful air fryer lamb kofta kebabs that are easy to make and perfect for a quick weeknight dinner.


Ingredients

  • 1 pound ground lamb, ideally 80 to 85 percent lean
  • 1 small onion, finely grated and squeezed of excess liquid
  • 2 garlic cloves, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh mint or 1 teaspoon dried mint
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon black pepper
  • Optional: a pinch of cinnamon or allspice for warmth
  • Optional binder: 2 tablespoons fine bulgur or almond flour
  • Olive oil spray


Instructions

  1. Mix gently: Add everything to a bowl and combine with your hands until just blended.
  2. Shape: Wet your hands to prevent sticking. Divide into 8 portions and mold each one onto a skewer or into oval logs about 4 inches long.
  3. Chill: Pop them into the fridge for 15 to 20 minutes.
  4. Preheat: Preheat the air fryer to 375°F (190°C) for 3 minutes and lightly spray the basket with oil.
  5. Cook: Add the kofta in a single layer and air fry for 8 to 10 minutes, turning halfway.
  6. Rest: Let them rest for 3 minutes before serving.

Notes

Keep the meat cold for better binding and easier shaping. Shape the kofta smaller for kids or picky eaters.
