Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 cup buttermilk
- 1 tablespoon red food coloring
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 1 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In another bowl, cream the sugar and butter together until light and fluffy.
- Beat in the egg, buttermilk, food coloring, and vanilla until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop tablespoon-sized amounts of batter onto the prepared baking sheet, leaving space between each.
- Bake for 10-12 minutes or until a toothpick comes out clean. Let cool.
- For the filling, beat together cream cheese, powdered sugar, and vanilla until smooth.
- Spread filling on the flat side of one whoopie pie and top with another to create a sandwich.
