Delicious pork chops marinated in a sweet and tangy raspberry balsamic sauce, perfect for family dinners and special occasions.
Ingredients
- 4 boneless pork chops
- 1/3 cup raspberry balsamic vinegar
- 2 tablespoons water
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup olive oil
- 1/2 tablespoon ground basil
- 1/2 teaspoon oregano
- 1 cup raspberries (fresh or frozen)
- 3/4 cup water
- 1/4 cup sugar
- 1 teaspoon raspberry balsamic vinegar
- 1/4 teaspoon chili flakes
Instructions
- Combine marinade ingredients (1/3 cup raspberry balsamic vinegar, 2 tablespoons water, 1 teaspoon minced garlic, 1/2 teaspoon salt, 1/4 teaspoon pepper, 1/2 cup olive oil, 1/2 tablespoon ground basil, and 1/2 teaspoon oregano) in a bowl and mix until well combined. Pour over pork chops and marinate in the fridge for at least 1 hour.
- For the raspberry sauce, combine 1/4 cup sugar, 3/4 cup water, and 1 cup raspberries in a small pan over medium heat and bring to a boil. Reduce to a simmer and add in 1 teaspoon raspberry balsamic vinegar and 1/4 teaspoon chili flakes. Cook until the sauce is reduced in half.
- Grill the marinated pork chops for 3-4 minutes on each side until the internal temperature reaches 150°F.
- Serve the pork chops topped with the raspberry sauce.
Notes
For best flavor, marinate pork chops overnight. Adjust sweetness of sauce by modifying sugar amount. Store leftovers for up to 3 days.
