Description

A fun and tasty twist on traditional pancakes, Pancake Poppers are bite-sized treats perfect for breakfast or snacks, easily customizable with various toppings.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Optional toppings: maple syrup, chocolate chips, or fresh fruit


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract.
  4. Combine the wet and dry ingredients until just blended.
  5. If desired, fold in chocolate chips or fresh fruit.
  6. Pour the batter into the mini muffin pan, filling each cup about 2/3 full.
  7. Bake for 10-12 minutes or until golden brown and a toothpick comes out clean.
  8. Let them cool slightly, then serve warm with maple syrup or your favorite toppings.

Notes

Do not overmix the batter for fluffiness. Experiment with different mix-ins like nuts or dried fruit.
