Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- Optional toppings: maple syrup, chocolate chips, or fresh fruit
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract.
- Combine the wet and dry ingredients until just blended.
- If desired, fold in chocolate chips or fresh fruit.
- Pour the batter into the mini muffin pan, filling each cup about 2/3 full.
- Bake for 10-12 minutes or until golden brown and a toothpick comes out clean.
- Let them cool slightly, then serve warm with maple syrup or your favorite toppings.
Notes
Do not overmix the batter for fluffiness. Experiment with different mix-ins like nuts or dried fruit.
