Ingredients
- 2 1/2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cocoa powder
- 1 1/2 cups vegetable oil
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 8 oz cream cheese
- 1/2 cup butter
- 4 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, sift together the flour, baking soda, salt, and cocoa powder.
- In a large bowl, beat together the sugar, oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
- For the cream cheese frosting, beat together cream cheese, butter, powdered sugar, and vanilla extract until smooth.
- Once the cakes are cool, frost the top of one layer, place the second layer on top, and frost the top and sides of the cake.
- Slice and serve!
Notes
Ensure the eggs and buttermilk are at room temperature for better mixing. For a richer flavor, let the cake sit for a day before serving. You can also add a hint of cinnamon or nutmeg for a unique twist.
