Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 3 (8 oz) packages cream cheese, softened
- 1 cup sour cream
- 1 cup heavy whipping cream
- 1 cup chocolate chip cookies, crushed
- 2 tablespoons instant coffee granules
- 1 teaspoon vanilla extract
- 1 cup ganache (chocolate + heavy cream)
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan to create the crust.
- In a large bowl, beat the cream cheese and sugar until smooth. Add the sour cream, heavy cream, coffee granules, and vanilla; mix until well combined.
- Pour the cheesecake batter over the prepared crust.
- Bake for 50-60 minutes, or until the cheesecake is set in the middle. Let it cool at room temperature for 1 hour, then refrigerate for at least 4 hours before serving.
