Description

Deliciously easy mini cheesecakes that impress guests, perfect for any occasion.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • 3 tablespoons granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream or heavy cream


Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin pan with paper liners.
  2. In a mixing bowl, combine the graham cracker crumbs, 3 tablespoons of sugar, and melted butter. Press this mixture firmly into the bottom of each liner.
  3. In another bowl, beat the softened cream cheese and ½ cup of sugar until smooth.
  4. Add the eggs one at a time, mixing well. Stir in the vanilla extract and sour cream until everything is combined.
  5. Spoon the cream cheese filling over the crusts, filling them about ¾ full.
  6. Bake for 18 to 22 minutes, or until the centers are set.
  7. Allow to cool at room temperature, then refrigerate for at least 2 hours.
  8. Remove from liners, add toppings, and serve chilled.

Notes

For a variety of flavors, try adding lemon zest, chocolate chips, or fruit purees.
