Deliciously easy mini cheesecakes that impress guests, perfect for any occasion.
Ingredients
- 1 ½ cups graham cracker crumbs
- 3 tablespoons granulated sugar
- 6 tablespoons unsalted butter, melted
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup sour cream or heavy cream
Instructions
- Preheat your oven to 325°F (160°C) and line a muffin pan with paper liners.
- In a mixing bowl, combine the graham cracker crumbs, 3 tablespoons of sugar, and melted butter. Press this mixture firmly into the bottom of each liner.
- In another bowl, beat the softened cream cheese and ½ cup of sugar until smooth.
- Add the eggs one at a time, mixing well. Stir in the vanilla extract and sour cream until everything is combined.
- Spoon the cream cheese filling over the crusts, filling them about ¾ full.
- Bake for 18 to 22 minutes, or until the centers are set.
- Allow to cool at room temperature, then refrigerate for at least 2 hours.
- Remove from liners, add toppings, and serve chilled.
Notes
For a variety of flavors, try adding lemon zest, chocolate chips, or fruit purees.
