Description

A comforting casserole perfect for busy weeknights, featuring chopped chicken in a creamy base and a crunchy Ritz cracker topping.


Ingredients

  • 4½ cups chopped cooked chicken
  • 4 oz cream cheese (room temperature)
  • 1 cup cottage cheese
  • ½ cup sour cream
  • 1 (10.5 oz) can unsalted cream of chicken soup
  • ¼ tsp garlic powder
  • ¼ tsp dried onion powder
  • 1 sleeve Ritz crackers (crushed)
  • 5 Tbsp butter (melted)


Instructions

  1. Preheat your oven to 350°F. Lightly spray a 9×9-inch baking dish with cooking spray and set it aside.
  2. In a large bowl, combine the chopped chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup. Mix well until combined.
  3. Spread the chicken mixture evenly into the prepared pan.
  4. In another bowl, combine the crushed Ritz crackers and melted butter. Mix until the crackers are evenly coated.
  5. Sprinkle the cracker mixture over the chicken mixture in the baking dish.
  6. Bake uncovered for 30 to 40 minutes, or until the casserole is hot and bubbly.
