A comforting casserole perfect for busy weeknights, featuring chopped chicken in a creamy base and a crunchy Ritz cracker topping.
Ingredients
- 4½ cups chopped cooked chicken
- 4 oz cream cheese (room temperature)
- 1 cup cottage cheese
- ½ cup sour cream
- 1 (10.5 oz) can unsalted cream of chicken soup
- ¼ tsp garlic powder
- ¼ tsp dried onion powder
- 1 sleeve Ritz crackers (crushed)
- 5 Tbsp butter (melted)
Instructions
- Preheat your oven to 350°F. Lightly spray a 9×9-inch baking dish with cooking spray and set it aside.
- In a large bowl, combine the chopped chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup. Mix well until combined.
- Spread the chicken mixture evenly into the prepared pan.
- In another bowl, combine the crushed Ritz crackers and melted butter. Mix until the crackers are evenly coated.
- Sprinkle the cracker mixture over the chicken mixture in the baking dish.
- Bake uncovered for 30 to 40 minutes, or until the casserole is hot and bubbly.
