Description

A delightful dish of fresh haddock baked with garlic, lemon, and herbs, complemented by cherry tomatoes and red onion. Ready in under 30 minutes.


Ingredients

  • Juice and zest of 1 lemon
  • 1 teaspoon paprika
  • 1 teaspoon sea salt
  • 4 haddock fillets (about 6 oz each)
  • 3 tablespoons extra-virgin olive oil
  • 3 cloves garlic, minced
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried)
  • ½ teaspoon freshly ground black pepper
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
  2. Pat the haddock fillets dry with paper towels and arrange them in the dish.
  3. In a bowl, whisk together the olive oil, garlic, thyme, lemon juice and zest, paprika, salt, and pepper.
  4. Spoon the mixture over the fish. Scatter the cherry tomatoes and red onion around the fillets.
  5. Bake for 15–18 minutes, or until the haddock flakes easily with a fork.
  6. Garnish with chopped parsley and serve warm with couscous, quinoa, or roasted vegetables.

Notes

Feel free to add other vegetables like bell peppers or zucchini for more color and nutrients. For extra flavor, let the fish marinate in the olive oil and herb mixture for 30 minutes before baking.
