A creamy and savory chicken soup that’s perfect for chilly days and easy to prepare.
Ingredients
- 1 lb chicken breast, shredded
- 4 cups chicken broth
- ½ cup sun-dried tomatoes, chopped
- 1 cup heavy cream (or half and half)
- ½ cup Parmesan cheese
- 1 tsp Italian seasoning
- 1 clove garlic, minced
- Salt & pepper, to taste
- 1 tbsp butter
Instructions
- Melt 1 tablespoon of butter in a large pot over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Pour in chicken broth, add chopped sun-dried tomatoes, and sprinkle in Italian seasoning. Bring to a simmer and cook for 10 minutes.
- Stir in shredded chicken, heavy cream, and Parmesan cheese. Heat until warmed through and creamy, about 5 minutes. Season with salt and pepper to taste.
Notes
Add extra Parmesan cheese or fresh herbs on top before serving. Pair with crusty bread or a light salad.
