Ingredients
- 2 tablespoons Olive Oil
- 1 medium Yellow Onion, finely diced
- 1 teaspoon Freshly Ground Pepper
- 1 teaspoon Salt
- 1 teaspoon Granulated Garlic Powder
- 1 teaspoon Dried Thyme
- 2 tablespoons Tomato Paste
- 4 cups Chicken Stock
- 1 cup Filtered Water
- 1 teaspoon Sugar
- 1 cup Sun-dried Tomatoes, chopped
- 2 cups Diced or Shredded Cooked Chicken
- 1 cup Small Shape Pasta, uncooked
- 1 cup Heavy Cream
- 1/2 cup Grated Parmesan Cheese
- 2 cups Baby Spinach
- 1 tablespoon Red Wine Vinegar
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until soft and translucent, about 3-4 minutes.
- Season the onions with freshly ground pepper, salt, garlic powder, and dried thyme. Stir for another minute to combine.
- Add the tomato paste, mixing it well with the onion-spice mixture, and cook for 1-2 minutes until it darkens slightly.
- Pour in the chicken stock and filtered water. Bring to a gentle boil.
- Stir in the sugar, sun-dried tomatoes, cooked chicken, and pasta. Reduce the heat and let it simmer for about 10 minutes, or until the pasta is tender.
- Lower the heat and add the heavy cream, grated Parmesan cheese, and baby spinach. Stir until spinach wilts and everything is combined.
- Add the red wine vinegar just before serving for extra flavor.
Notes
Serve warm with crusty bread or a simple salad. For a thicker soup, let it simmer longer to reduce liquid.
