Ingredients

  • 2 tablespoons Olive Oil
  • 1 medium Yellow Onion, finely diced
  • 1 teaspoon Freshly Ground Pepper
  • 1 teaspoon Salt
  • 1 teaspoon Granulated Garlic Powder
  • 1 teaspoon Dried Thyme
  • 2 tablespoons Tomato Paste
  • 4 cups Chicken Stock
  • 1 cup Filtered Water
  • 1 teaspoon Sugar
  • 1 cup Sun-dried Tomatoes, chopped
  • 2 cups Diced or Shredded Cooked Chicken
  • 1 cup Small Shape Pasta, uncooked
  • 1 cup Heavy Cream
  • 1/2 cup Grated Parmesan Cheese
  • 2 cups Baby Spinach
  • 1 tablespoon Red Wine Vinegar


Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until soft and translucent, about 3-4 minutes.
  2. Season the onions with freshly ground pepper, salt, garlic powder, and dried thyme. Stir for another minute to combine.
  3. Add the tomato paste, mixing it well with the onion-spice mixture, and cook for 1-2 minutes until it darkens slightly.
  4. Pour in the chicken stock and filtered water. Bring to a gentle boil.
  5. Stir in the sugar, sun-dried tomatoes, cooked chicken, and pasta. Reduce the heat and let it simmer for about 10 minutes, or until the pasta is tender.
  6. Lower the heat and add the heavy cream, grated Parmesan cheese, and baby spinach. Stir until spinach wilts and everything is combined.
  7. Add the red wine vinegar just before serving for extra flavor.

Notes

Serve warm with crusty bread or a simple salad. For a thicker soup, let it simmer longer to reduce liquid.
