Description

A creamy and romantic pasta dish featuring tender chicken, sun-dried tomatoes, and Parmesan cheese, perfect for date nights or special occasions.


Ingredients

  • 2 large boneless, skinless chicken breasts, sliced thinly
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 8 oz pasta (penne, rigatoni, or fettuccine)
  • Fresh basil leaves, for garnish


Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the sliced chicken with salt and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in the sun-dried tomatoes and chicken broth. Bring to a simmer.
  5. Add heavy cream, Italian seasoning, and crushed red pepper flakes (if using). Mix well and let it simmer for a few minutes.
  6. Return the chicken to the skillet and stir in the Parmesan cheese until melted and combined.
  7. Add the cooked pasta to the skillet, tossing to combine everything well. Cook for an additional minute to heat through.
  8. Serve immediately, garnished with fresh basil.

Notes

Use freshly grated Parmesan for better flavor. Feel free to add vegetables for added nutrition. Adjust spices to your preference.
