Description
A creamy and romantic pasta dish featuring tender chicken, sun-dried tomatoes, and Parmesan cheese, perfect for date nights or special occasions.
Ingredients
- 2 large boneless, skinless chicken breasts, sliced thinly
- Salt and pepper, to taste
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional)
- 8 oz pasta (penne, rigatoni, or fettuccine)
- Fresh basil leaves, for garnish
Instructions
- Cook the pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season the sliced chicken with salt and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Stir in the sun-dried tomatoes and chicken broth. Bring to a simmer.
- Add heavy cream, Italian seasoning, and crushed red pepper flakes (if using). Mix well and let it simmer for a few minutes.
- Return the chicken to the skillet and stir in the Parmesan cheese until melted and combined.
- Add the cooked pasta to the skillet, tossing to combine everything well. Cook for an additional minute to heat through.
- Serve immediately, garnished with fresh basil.
Notes
Use freshly grated Parmesan for better flavor. Feel free to add vegetables for added nutrition. Adjust spices to your preference.
