A comforting soup combining tender chicken, soft gnocchi, and creamy broth that’s perfect for cozy dinners.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 2 cups chicken broth
- 1 bag (16 oz) gnocchi
- 1 cup heavy cream
- 1 cup spinach
- 1 onion, chopped
- 3 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Season the chicken with salt and pepper and cook until browned. Remove and set aside.
- In the same pot, add onion and garlic, sauté until translucent.
- Add chicken broth and bring to a boil.
- Stir in the gnocchi and cook according to package instructions.
- Return the chicken to the pot along with heavy cream and spinach, simmer until heated through.
- Serve warm in bowls.
Notes
Sprinkle freshly grated parmesan cheese on top for extra flavor and serve with crusty bread.
