A warm and comforting soup combining tender chicken, creamy broth, and delightful gnocchi, perfect for chilly days.
Ingredients
- 2 tablespoons olive oil
- 1 pound boneless skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 garlic cloves, minced
- 1/3 cup chopped sun-dried tomatoes
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 pound potato gnocchi
- 2 cups baby spinach
- 1/4 cup chopped fresh basil
Instructions
- Season chicken breasts with salt and pepper. In a large pot, heat olive oil and sear chicken until cooked through. Remove and dice.
- In the same pot, sauté garlic and sun-dried tomatoes until fragrant. Stir in Italian seasoning and red pepper flakes.
- Add chicken broth and bring to a simmer. Return the diced chicken to the pot.
- Pour in heavy cream and Parmesan. Stir until creamy and well combined.
- Add gnocchi and cook for about 5 minutes until tender.
- Stir in spinach and basil just before serving.
- Ladle into bowls and garnish with extra Parmesan and black pepper.
Notes
For extra flavor, consider adding a splash of lemon juice before serving. If you want a thicker soup, let it simmer longer to reduce the liquid.
