Ingredients
- 1 lb chicken breast (boneless, skinless)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 1 package (16 oz) gnocchi
- 2 cups spinach (fresh)
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Parmesan cheese, for serving (grated)
Instructions
- In a large pot, heat a bit of oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is soft and translucent.
- Add the chicken breast to the pot. Cook until the chicken is browned on all sides.
- Pour in the chicken broth and diced tomatoes. Add the Italian seasoning, salt, and pepper. Bring the mixture to a boil.
- Reduce heat and let it simmer for about 20 minutes, until the chicken is cooked through. Remove the chicken and shred it with two forks.
- Return the shredded chicken back to the pot. Stir in the heavy cream and bring it back to a gentle boil.
- Add the gnocchi and cook according to the package instructions, usually about 2-3 minutes.
- Just before serving, stir in the fresh spinach until it wilts.
Notes
For added flavor, consider using rotisserie chicken or adding chopped herbs. Adjust the thickness of the soup by modifying the chicken broth.
