Description
A delightful side dish combining sweet potatoes, maple syrup, and toasted walnuts, perfect for any meal.
Ingredients
- 2–3 tbsp olive oil
- 2 tbsp pure maple syrup
- 1/2 tsp ground cinnamon
- 2 lbs sweet potatoes, peeled and cut into 1-inch cubes
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup chopped walnuts, toasted
- Optional: fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss sweet potatoes with olive oil, maple syrup, cinnamon, salt, and pepper until evenly coated.
- Spread the coated sweet potatoes in a single layer on the baking sheet and roast for 25–30 minutes, stirring halfway through for even cooking.
- Sprinkle chopped walnuts over the sweet potatoes during the last 5 minutes of roasting to toast them lightly.
- Transfer to a serving dish, garnish with parsley if desired, and serve warm.
Notes
Cut sweet potatoes into even cubes for even cooking. Adjust maple syrup to taste and ensure to stir halfway through roasting for an even roast.
