Ingredients

  • 1 cup almond flour
  • ½ cup grated Parmesan cheese
  • 1 teaspoon smoked paprika
  • 1 ½ lbs chicken tenders or chicken breast strips
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs, beaten
  • 2 tablespoons heavy cream
  • 3 tablespoons olive or avocado oil
  • ¼ cup sugar-free honey substitute
  • 2 tablespoons hot sauce (like Frank’s RedHot)
  • 1 tablespoon butter


Instructions

  1. Pat the chicken tenders dry with paper towels to remove excess moisture.
  2. In a bowl, whisk together the eggs and heavy cream.
  3. In another bowl, combine almond flour, Parmesan cheese, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  4. Dip each chicken tender into the egg wash, then coat with the almond flour mixture, pressing firmly to adhere.
  5. Heat olive or avocado oil in a skillet over medium heat. Fry the coated chicken tenders for 3 to 4 minutes on each side, or until golden and cooked through (165°F internal temperature).
  6. Remove from the skillet and drain on paper towels.
  7. In a small saucepan, melt butter, sugar-free honey, and hot sauce over low heat until smooth.
  8. Drizzle or toss the sauce over the chicken tenders before serving.

Notes

Ensure the oil is hot before frying for a crispy coating. Adjust cayenne pepper for desired spice level.
