Ingredients
- 1 cup almond flour
- ½ cup grated Parmesan cheese
- 1 teaspoon smoked paprika
- 1 ½ lbs chicken tenders or chicken breast strips
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon cayenne pepper (optional)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 large eggs, beaten
- 2 tablespoons heavy cream
- 3 tablespoons olive or avocado oil
- ¼ cup sugar-free honey substitute
- 2 tablespoons hot sauce (like Frank’s RedHot)
- 1 tablespoon butter
Instructions
- Pat the chicken tenders dry with paper towels to remove excess moisture.
- In a bowl, whisk together the eggs and heavy cream.
- In another bowl, combine almond flour, Parmesan cheese, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
- Dip each chicken tender into the egg wash, then coat with the almond flour mixture, pressing firmly to adhere.
- Heat olive or avocado oil in a skillet over medium heat. Fry the coated chicken tenders for 3 to 4 minutes on each side, or until golden and cooked through (165°F internal temperature).
- Remove from the skillet and drain on paper towels.
- In a small saucepan, melt butter, sugar-free honey, and hot sauce over low heat until smooth.
- Drizzle or toss the sauce over the chicken tenders before serving.
Notes
Ensure the oil is hot before frying for a crispy coating. Adjust cayenne pepper for desired spice level.
