High Protein Creamy Taco Pasta

Description

A delicious dish combining the flavors of tacos with pasta, packed with protein and creamy goodness.


Ingredients

  • 1 pound lean ground beef
  • 1 can black beans, drained and rinsed
  • 8 ounces pasta (your choice)
  • 1 cup cheddar cheese, shredded
  • 1 cup heavy cream or creamer
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Optional toppings: sour cream, chopped cilantro, diced tomatoes


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Stir in black beans and taco seasoning, cooking for a couple of minutes.
  4. Add the heavy cream and cheese to the skillet, stirring until the cheese is melted and the sauce is smooth.
  5. Combine the cooked pasta with the beef mixture, mixing well to coat.
  6. Season with salt and pepper to taste.
  7. Serve with optional toppings if desired.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat with a splash of milk or cream.
