Description
A delicious dish combining the flavors of tacos with pasta, packed with protein and creamy goodness.
Ingredients
- 1 pound lean ground beef
- 1 can black beans, drained and rinsed
- 8 ounces pasta (your choice)
- 1 cup cheddar cheese, shredded
- 1 cup heavy cream or creamer
- 1 packet taco seasoning
- Salt and pepper to taste
- Optional toppings: sour cream, chopped cilantro, diced tomatoes
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Stir in black beans and taco seasoning, cooking for a couple of minutes.
- Add the heavy cream and cheese to the skillet, stirring until the cheese is melted and the sauce is smooth.
- Combine the cooked pasta with the beef mixture, mixing well to coat.
- Season with salt and pepper to taste.
- Serve with optional toppings if desired.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days. Reheat with a splash of milk or cream.
