A quick and easy pasta dish packed with flavor, using lean ground beef and Greek yogurt for a creamy texture.
Ingredients
- 1 lb lean ground beef
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 1 can tomatoes with juices (14.5 oz)
- 1 cup low-sodium beef broth
- 8 oz penne pasta (or other short pasta like rigatoni or fusilli)
- 1 tbsp Italian seasoning
- Salt and pepper (to taste)
- 1 tbsp olive oil
- ½ cup plain Greek yogurt
- ¼ cup grated parmesan cheese
- 1 handful fresh basil or parsley (for garnish)
Instructions
- Begin by boiling water in a large pot. Add the pasta and cook according to the package instructions. Once cooked, drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion becomes soft. Then add the ground beef and brown it until fully cooked. Drain any excess fat if needed.
- Add the canned tomatoes (with juices) and beef broth to the skillet. Stir in the Italian seasoning, salt, and pepper. Allow the mixture to simmer for about 10 minutes.
- Remove the skillet from heat and stir in the Greek yogurt and grated parmesan cheese. Mix until everything is well combined and creamy.
- Add the cooked pasta to the skillet. Toss until the pasta is fully coated with the creamy beef sauce.
- Serve hot, garnished with fresh basil or parsley on top.
Notes
For added flavor, try using different spices such as red pepper flakes or fresh oregano. You can also substitute ground beef with ground turkey or chicken for a leaner meal.
