Fluffy and savory egg bites made in the air fryer, perfect for a quick and protein-packed breakfast.
Ingredients
- 6 large eggs
- 1/2 cup cottage cheese or Greek yogurt
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 teaspoon garlic powder or onion powder
- 1/2 cup chopped veggies (bell pepper, spinach, or onion)
- 1/3 cup cooked protein (turkey bacon, chicken sausage, or diced ham)
- 1/4 cup shredded cheese (optional)
- Olive oil spray or butter for greasing
Instructions
- Preheat the air fryer to 300°F (150°C) and grease silicone cups or ramekins. Place them in the basket without touching.
- Blend the eggs, cottage cheese, salt, pepper, and garlic/onion powder until smooth.
- Divide the chopped veggies and cooked protein between the cups. Pour the egg mixture over the fillings, leaving space at the top.
- Cover the cups loosely with foil. Air fry for 10-12 minutes until just set in the center.
- Let them rest for 2-3 minutes to firm up before carefully removing and enjoying.
Notes
These egg bites can be customized with various vegetables and proteins. Store in the fridge for up to 4 days or freeze for longer storage.
