Description

Fluffy and savory egg bites made in the air fryer, perfect for a quick and protein-packed breakfast.


Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese or Greek yogurt
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon garlic powder or onion powder
  • 1/2 cup chopped veggies (bell pepper, spinach, or onion)
  • 1/3 cup cooked protein (turkey bacon, chicken sausage, or diced ham)
  • 1/4 cup shredded cheese (optional)
  • Olive oil spray or butter for greasing


Instructions

  1. Preheat the air fryer to 300°F (150°C) and grease silicone cups or ramekins. Place them in the basket without touching.
  2. Blend the eggs, cottage cheese, salt, pepper, and garlic/onion powder until smooth.
  3. Divide the chopped veggies and cooked protein between the cups. Pour the egg mixture over the fillings, leaving space at the top.
  4. Cover the cups loosely with foil. Air fry for 10-12 minutes until just set in the center.
  5. Let them rest for 2-3 minutes to firm up before carefully removing and enjoying.

Notes

These egg bites can be customized with various vegetables and proteins. Store in the fridge for up to 4 days or freeze for longer storage.
