Delicious and healthy Greek Chicken Bowls featuring marinated grilled chicken, fresh veggies, and creamy tzatziki over quinoa or rice.
Ingredients
- 2 chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cucumber, chopped
- 2 tomatoes, chopped
- 1/2 red onion, chopped
- 1/2 cup feta cheese, crumbled
- 1 cup quinoa or rice
- Fresh parsley, for garnish
- 1 cup Greek yogurt
- 1 tablespoon dill
Instructions
- Marinate the chicken breasts in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
- Grill or bake the chicken until fully cooked, then slice.
- Cook quinoa or rice according to package instructions.
- Chop the cucumber, tomatoes, and red onion.
- Prepare tzatziki sauce by mixing Greek yogurt, diced cucumber, garlic, dill, lemon juice, salt, and pepper.
- Assemble the bowls with quinoa/rice, sliced chicken, fresh veggies, and tzatziki sauce.
- Sprinkle with feta cheese and fresh parsley before serving.
Notes
Store leftovers in the refrigerator for up to three days. Keep chicken, veggies, and sauces in separate containers.
