Description

Delicious and healthy Greek Chicken Bowls featuring marinated grilled chicken, fresh veggies, and creamy tzatziki over quinoa or rice.


Ingredients

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cucumber, chopped
  • 2 tomatoes, chopped
  • 1/2 red onion, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 cup quinoa or rice
  • Fresh parsley, for garnish
  • 1 cup Greek yogurt
  • 1 tablespoon dill


Instructions

  1. Marinate the chicken breasts in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
  2. Grill or bake the chicken until fully cooked, then slice.
  3. Cook quinoa or rice according to package instructions.
  4. Chop the cucumber, tomatoes, and red onion.
  5. Prepare tzatziki sauce by mixing Greek yogurt, diced cucumber, garlic, dill, lemon juice, salt, and pepper.
  6. Assemble the bowls with quinoa/rice, sliced chicken, fresh veggies, and tzatziki sauce.
  7. Sprinkle with feta cheese and fresh parsley before serving.

Notes

Store leftovers in the refrigerator for up to three days. Keep chicken, veggies, and sauces in separate containers.
