Description

A flavorful and easy dish made with chicken, baby potatoes, and a rich garlic Parmesan sauce, cooked in a crockpot for a hassle-free meal.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 5 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Lightly grease the crockpot with 1 tablespoon of olive oil.
  2. Arrange the halved baby potatoes and chicken breasts evenly in the crockpot.
  3. In a small bowl, mix together the remaining olive oil, grated Parmesan, minced garlic, Italian seasoning, salt, and black pepper.
  4. Pour the Parmesan garlic mixture over the chicken and potatoes, ensuring everything is well coated.
  5. Cover and cook on low for 4 hours, or until the chicken is cooked through and potatoes are tender.
  6. Garnish with fresh parsley before serving. Enjoy!

Notes

For extra flavor, marinate the chicken in the garlic Parmesan mixture for a few hours before cooking. You can also experiment with adding vegetables like carrots or green beans.
