Fluffy Egg Cups are an easy and customizable breakfast option, filled with protein and perfect for meal prep.
Ingredients
- 10 large eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder (optional)
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/2 cup chopped baby spinach
- 1/2 cup cooked bacon or sausage, crumbled (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease or line a 12-cup muffin tin.
- In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until frothy.
- Stir in the cheese, bell peppers, spinach, and bacon or sausage if using.
- Divide the mixture evenly into the muffin cups, filling them about 2/3 full.
- Bake for 18–20 minutes or until the tops have puffed up and centers are set.
- Cool for 5 minutes before removing from the pan. Serve warm or store for later.
Notes
Use fresh ingredients for better flavor. You can mix up the vegetables based on what you have at home.
