Description

Fluffy Egg Cups are a quick and healthy meal, perfect for busy mornings or as a snack. Customize them with your favorite ingredients and make ahead for convenience.


Ingredients

  • 10 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped baby spinach
  • 1/2 cup cooked bacon or sausage, crumbled (optional)


Instructions

  1. Preheat the oven to 375°F (190°C) and grease or line a 12-cup muffin tin.
  2. In a large bowl, whisk the eggs, milk, salt, pepper, and garlic powder until frothy.
  3. Stir in the cheese, bell peppers, spinach, and cooked meat if using.
  4. Divide the mixture evenly into the muffin cups, filling them about 2/3 full.
  5. Bake for 18–20 minutes or until the tops are puffed and the centers are set.
  6. Cool for 5 minutes before removing from the pan. Serve warm or store for later.

Notes

These egg cups can be stored in the refrigerator for up to 4 days or frozen for longer storage. Experiment with different vegetables and cheeses for added flavor.
