Ingredients
- 10 large eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder (optional)
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/2 cup chopped baby spinach
- 1/2 cup cooked bacon or sausage, crumbled (optional)
Instructions
- Preheat the oven to 375°F (190°C) and grease or line a 12-cup muffin tin.
- In a large bowl, whisk the eggs, milk, salt, pepper, and garlic powder until frothy.
- Stir in the cheese, bell peppers, spinach, and cooked meat if using.
- Divide the mixture evenly into the muffin cups, filling them about 2/3 full.
- Bake for 18–20 minutes or until the tops are puffed and the centers are set.
- Cool for 5 minutes before removing from the pan. Serve warm or store for later.
Notes
These egg cups can be stored in the refrigerator for up to 4 days or frozen for longer storage. Experiment with different vegetables and cheeses for added flavor.
