Description

A delicious and easy-to-prepare chicken dish featuring a creamy sauce with sun-dried tomatoes and spinach, perfect for impressing your loved ones.


Ingredients

  • 2 boneless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach, fresh or frozen
  • ½ cup grated Parmesan cheese
  • Fresh basil, for garnish (optional)


Instructions

  1. Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the seasoned chicken breasts to the skillet. Cook for about 5-7 minutes on each side, until they are golden brown and cooked through.
  4. Remove the chicken from the skillet and set it aside.
  5. In the same skillet, add the heavy cream, sun-dried tomatoes, and spinach. Stir and let it cook for about 3-5 minutes until the spinach wilts and the sauce thickens.
  6. Add the Parmesan cheese to the skillet and stir until melted.
  7. Return the chicken to the skillet and coat it with the sauce. Let it simmer for a couple of minutes.
  8. Serve hot and garnish with fresh basil if desired.

Notes

For added flavor, marinate the chicken for a few hours before cooking. If you prefer a lighter version, you can use half-and-half instead of heavy cream.
