Ingredients
- 2 boneless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup heavy cream
- 1 cup sun-dried tomatoes, chopped
- 1 cup spinach, fresh or frozen
- ½ cup grated Parmesan cheese
- Fresh basil, for garnish (optional)
Instructions
- Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
- In a large skillet, heat olive oil over medium heat.
- Add the seasoned chicken breasts to the skillet. Cook for about 5-7 minutes on each side, until they are golden brown and cooked through.
- Remove the chicken from the skillet and set it aside.
- In the same skillet, add the heavy cream, sun-dried tomatoes, and spinach. Stir and let it cook for about 3-5 minutes until the spinach wilts and the sauce thickens.
- Add the Parmesan cheese to the skillet and stir until melted.
- Return the chicken to the skillet and coat it with the sauce. Let it simmer for a couple of minutes.
- Serve hot and garnish with fresh basil if desired.
Notes
For added flavor, marinate the chicken for a few hours before cooking. If you prefer a lighter version, you can use half-and-half instead of heavy cream.
