A quick and healthy pasta dish with broccoli, olive oil, and garlic, perfect for busy weeknights.
Ingredients
- 8 ounces pasta of choice
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Grated Parmesan cheese (for serving, optional)
Instructions
- Cook the pasta according to package instructions until al dente.
- In the last 3 minutes of cooking, add the broccoli florets to the pasta.
- Drain the pasta and broccoli, reserving a little pasta water.
- In the same pot, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté until fragrant.
- Add the drained pasta and broccoli back to the pot, tossing to combine.
- If the pasta seems dry, add a little reserved pasta water. Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese if desired.
Notes
For a healthier option, use whole-grain or gluten-free pasta. You can also add other vegetables like spinach or bell peppers.
