A vibrant Mediterranean salad featuring crispy air-fried halloumi, fresh vegetables, and a zesty lemon herb dressing.
Ingredients
- 8 ounces halloumi, sliced into half inch planks
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 lemon for zest and juice
- 2 cups chopped cucumbers
- 1.5 cups cherry tomatoes, halved
- 0.5 small red onion, thinly sliced
- 0.5 cup kalamata olives, pitted
- 2 cups mixed greens or chopped romaine
- Salt and black pepper to taste
Instructions
- Pat the halloumi dry with paper towels to remove surface moisture.
- Preheat the air fryer to 375°F for 3 minutes.
- Brush both sides of each slice of halloumi with olive oil and sprinkle with oregano, salt, and black pepper.
- Air fry the halloumi for 6 to 8 minutes, flipping halfway, until golden and the center is soft.
- In a large bowl, toss the cucumbers, tomatoes, onion, olives, and greens with lemon juice, lemon zest, olive oil, and a pinch of salt.
- Slice or cube the hot halloumi and gently fold it into the salad. Let sit for 2 minutes before serving.
Notes
For extra flavor, consider adding fresh herbs like parsley or mint to the salad. Serve with warm grains or a protein for a complete meal.
