Description

Delightful pork chops in a rich creamy sauce with mushrooms and spinach, perfect for weeknight dinners or special occasions.


Ingredients

  • 4 pork chops
  • Salt & pepper to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter (divided)
  • 8 ounces cremini or white mushrooms (sliced)
  • 3 cloves garlic (minced)
  • 1/4 teaspoon Italian seasoning
  • 1 tablespoon flour
  • 1/2 cup chicken broth
  • 1/2 teaspoon lemon juice
  • 3/4 cup heavy/whipping cream
  • 2 cups fresh baby spinach (packed)


Instructions

  1. Take the pork chops out of the fridge 15-30 minutes before starting. Season with salt and pepper.
  2. In a skillet, heat olive oil and 1 tablespoon of butter over medium-high heat.
  3. Cook the pork chops for 3-5 minutes on each side until golden, then transfer them to a plate.
  4. In the same skillet, add the remaining butter, mushrooms, garlic, and Italian seasoning. Cook for 5-6 minutes.
  5. Sprinkle the flour over the mixture and cook for another minute.
  6. Add the chicken broth and lemon juice, cooking until it reduces by half.
  7. Stir in the cream, then return the pork to the skillet. Cook for 3-5 minutes until the sauce thickens and the pork reaches 145°F.
  8. Add the spinach and let it wilt. Taste the sauce and season if needed. Serve immediately.

Notes

Make sure the pork chops are at room temperature before cooking for even cooking. You can customize this recipe with different vegetables or proteins.
