Ingredients
- 12 oz fettuccine pasta
- 3 cups broccoli florets (fresh or frozen)
- 2 boneless, skinless chicken breasts (sliced into strips)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 3 tablespoons butter
- 4 cloves garlic, minced
- 1½ cups heavy cream
- 1 cup grated Parmesan cheese
- ½ teaspoon Italian seasoning (optional)
- Fresh parsley, chopped (for garnish)
- Extra Parmesan, for serving
Instructions
- Boil salted water and cook the fettuccine until al dente. In the last 2 minutes of cooking, add broccoli. Drain the pasta and broccoli and set aside.
- In a skillet, heat olive oil over medium heat. Season the chicken with salt and pepper. Cook the chicken strips until golden and cooked through. Remove from skillet and set aside.
- In the same skillet, melt the butter and sauté the minced garlic for about 1 minute until fragrant.
- Pour in the heavy cream and bring it to a simmer. Add the grated Parmesan and optional Italian seasoning, stirring constantly until the sauce is creamy and smooth.
- Return the cooked pasta, broccoli, and chicken back into the skillet. Toss everything together to coat evenly with the sauce. Simmer for an additional 2-3 minutes.
- Garnish with chopped parsley and extra Parmesan before serving warm.
Notes
You can customize this recipe by adding other vegetables or using a meat alternative for a different protein option. Store leftovers in an airtight container for up to 3 days.
