Description

A delightful blend of coffee cake and banana bread, perfect for breakfast, snacks, or dessert.


Ingredients

  • 3-4 medium or large bananas
  • 2 Tbsp brown sugar
  • 1 1/2 tsp vanilla extract
  • 3/4 tsp ground cinnamon
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 Tbsp sour cream (or Greek yogurt)
  • 1 tsp cinnamon
  • 1 cup flour
  • 1 cup brown sugar
  • 6 Tbsp cold butter


Instructions

  1. Preheat the oven to 350°F (175°C). Grease two 8×4-inch pans.
  2. In a small bowl, mash the bananas, brown sugar, vanilla extract, and ground cinnamon together.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Add the eggs to the butter and sugar mixture and beat until mixed well.
  5. Sift in the flour, baking soda, and salt to the wet ingredients. Stir until just combined.
  6. Add in the sour cream and give it a good stir.
  7. Pour in the mashed banana mixture and mix until everything is well combined.
  8. In a separate bowl, mix the 1 cup of flour, 1 cup of brown sugar, 6 Tbsp of cold butter, and 1 tsp of cinnamon together until crumbly.
  9. Sprinkle the crumb topping over the banana bread batter in the pans.
  10. Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  11. Allow the breads to cool in the pans for a few minutes before transferring them to a wire rack to cool completely.

Notes

Use very ripe bananas for the best flavor and moisture. Do not overmix the batter.
