Description
A delightful blend of coffee cake and banana bread, perfect for breakfast, snacks, or dessert.
Ingredients
- 3-4 medium or large bananas
- 2 Tbsp brown sugar
- 1 1/2 tsp vanilla extract
- 3/4 tsp ground cinnamon
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 2 Tbsp sour cream (or Greek yogurt)
- 1 tsp cinnamon
- 1 cup flour
- 1 cup brown sugar
- 6 Tbsp cold butter
Instructions
- Preheat the oven to 350°F (175°C). Grease two 8×4-inch pans.
- In a small bowl, mash the bananas, brown sugar, vanilla extract, and ground cinnamon together.
- In a large bowl, cream the softened butter and sugar until light and fluffy.
- Add the eggs to the butter and sugar mixture and beat until mixed well.
- Sift in the flour, baking soda, and salt to the wet ingredients. Stir until just combined.
- Add in the sour cream and give it a good stir.
- Pour in the mashed banana mixture and mix until everything is well combined.
- In a separate bowl, mix the 1 cup of flour, 1 cup of brown sugar, 6 Tbsp of cold butter, and 1 tsp of cinnamon together until crumbly.
- Sprinkle the crumb topping over the banana bread batter in the pans.
- Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the breads to cool in the pans for a few minutes before transferring them to a wire rack to cool completely.
Notes
Use very ripe bananas for the best flavor and moisture. Do not overmix the batter.
