Ingredients
- 2 large eggs
- 2 large egg yolks
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter
- 6 oz semi-sweet chocolate, chopped
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/4 cup all-purpose flour
- Butter and cocoa powder (for greasing ramekins)
Instructions
- Preheat your oven to 425°F (220°C). Grease 4 ramekins with butter and dust them with cocoa powder.
- In a small pot, melt butter and chocolate together over low heat until smooth.
- In another bowl, whisk the eggs, yolks, sugar, vanilla, and salt until the mixture is pale and thick.
- Fold the melted chocolate into the egg mixture until combined. Sift in the flour and mix until just combined.
- Divide the batter among the ramekins and bake for 12–14 minutes. The edges should be set, while the centers stay soft.
- Let it cool for 1–2 minutes, then carefully invert the ramekins onto plates. Serve immediately.
Notes
Serve warm with vanilla ice cream or whipped cream. Do not over-bake for the perfect lava effect.
