Delightful bite-sized treats that combine the rich taste of cheesecake with the sweet freshness of strawberries, perfect for any occasion.
Ingredients
- 2 pounds fresh strawberries, large and firm
- 8 ounces cream cheese, softened
- 1/3 cup powdered sugar
- 1 tablespoon sour cream or Greek yogurt
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup finely chopped chocolate or semi-sweet chocolate chips
- 1 teaspoon butter or coconut oil
- 1/4 cup white chocolate chips
- Graham cracker crumbs, for garnish (optional) or strawberry crumble
Instructions
- Wash and thoroughly dry the strawberries. Remove the green leaves and hollow out the centers.
- In a mixing bowl, beat the cream cheese, powdered sugar, sour cream, lemon juice, vanilla extract, and salt until smooth. Pipe the filling into each hollowed-out strawberry. Chill the filled strawberries for a bit.
- Melt the chocolate and butter in a microwave-safe bowl. Dip each strawberry in the melted chocolate, covering about 2/3 of the berry, and place on a parchment-lined baking sheet to set in the fridge for about 15 minutes.
- Melt the white chocolate and drizzle over the dipped strawberries. Sprinkle graham cracker crumbs or strawberry crumble on top and refrigerate for another 10-15 minutes.
- Serve chilled and enjoy!
Notes
Ensure strawberries are completely dry before filling. Use a piping bag for easy filling and experiment with different chocolate types for variety.
