Ingredients
- 1 lb ground beef
- 1/2 lb bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 3 cups potatoes, diced
- 1 cup carrots, diced
- 1/2 cup celery, diced
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded Swiss cheese
- Salt and pepper to taste
- Optional toppings: croutons, additional cheese, green onions
Instructions
- In a large pot, cook the ground beef and bacon over medium heat until browned.
- Add the onion, garlic, carrots, and celery; cook until softened.
- Stir in the potatoes, beef broth, salt, and pepper, and bring to a boil.
- Reduce heat and let it simmer for about 15-20 minutes, until potatoes are tender.
- Stir in the milk and cheeses until melted.
- Serve hot, topped with optional toppings.
Notes
For extra flavor, consider adding Worcestershire sauce or mustard. You can also use leftover cooked burger patties.
