Description

A delightful dish that combines bold Cajun flavors with creamy sauce, tender chicken, and pasta, perfect for a hearty weeknight dinner.


Ingredients

  • 8 oz pasta (penne or fettuccine)
  • 2 chicken breasts, diced
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 bell pepper, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese, for serving
  • Fresh parsley, for garnish


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken and sprinkle with Cajun seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  3. Remove the chicken from the skillet and set aside. In the same skillet, add bell pepper, onion, and garlic. Sauté until softened, about 3-4 minutes.
  4. Add the cream and chicken broth to the skillet. Stir well and bring to a simmer.
  5. Return the chicken to the skillet and mix well. Add the cooked pasta and combine everything.
  6. Serve hot, garnished with parmesan cheese and fresh parsley.

Notes

Adjust the amount of Cajun seasoning based on your heat tolerance. For a lighter version, substitute heavy cream with half-and-half or Greek yogurt.
