Ingredients
- 8 oz pasta (penne or fettuccine)
- 2 chicken breasts, diced
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1 cup chicken broth
- 1 bell pepper, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese, for serving
- Fresh parsley, for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken and sprinkle with Cajun seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside. In the same skillet, add bell pepper, onion, and garlic. Sauté until softened, about 3-4 minutes.
- Add the cream and chicken broth to the skillet. Stir well and bring to a simmer.
- Return the chicken to the skillet and mix well. Add the cooked pasta and combine everything.
- Serve hot, garnished with parmesan cheese and fresh parsley.
Notes
Adjust the amount of Cajun seasoning based on your heat tolerance. For a lighter version, substitute heavy cream with half-and-half or Greek yogurt.
