Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound ground turkey or chicken
- 2 cans (15 oz each) white beans, drained and rinsed
- 3 cups chicken broth
- 1 can (4 oz) diced green chilies
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- Optional toppings: sour cream, shredded cheese, cilantro
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, cooking until softened.
- Add ground turkey or chicken, cooking until browned.
- Stir in the drained white beans, chicken broth, diced green chilies, cumin, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for about 20 minutes.
- Serve hot, topped with sour cream, shredded cheese, and cilantro if desired.
Notes
For a spicier kick, add chopped jalapeños or cayenne pepper. Adjust the seasoning to match your taste.
