Description

A delightful twist on classic lasagna, this One-Pot Lasagna Soup combines all the great flavors in a warm and comforting dish, perfect for busy weeknights.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 ounces lasagna noodles, broken into pieces
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish (optional)


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the ground beef or sausage and cook until browned.
  3. Stir in the chopped onion and minced garlic; cook until the onion is soft.
  4. Add the crushed tomatoes, broth, lasagna noodles, dried basil, oregano, salt, and pepper.
  5. Bring the mixture to a boil; then reduce heat and let it simmer for about 15-20 minutes.
  6. Stir in ricotta cheese until melted and mixed through.
  7. Sprinkle shredded mozzarella on top and let it melt for a few minutes.
  8. Garnish with fresh basil if you like.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Freeze for up to 3 months.
