A delightful twist on classic lasagna, this One-Pot Lasagna Soup combines all the great flavors in a warm and comforting dish, perfect for busy weeknights.
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef or Italian sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups chicken or vegetable broth
- 8 ounces lasagna noodles, broken into pieces
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the ground beef or sausage and cook until browned.
- Stir in the chopped onion and minced garlic; cook until the onion is soft.
- Add the crushed tomatoes, broth, lasagna noodles, dried basil, oregano, salt, and pepper.
- Bring the mixture to a boil; then reduce heat and let it simmer for about 15-20 minutes.
- Stir in ricotta cheese until melted and mixed through.
- Sprinkle shredded mozzarella on top and let it melt for a few minutes.
- Garnish with fresh basil if you like.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Freeze for up to 3 months.
