Description
A bright, Mediterranean-style dinner featuring crispy air-fried sardines, seasoned simply with lemon, olive oil, garlic, and herbs.
Ingredients
- 8 whole sardines, cleaned and patted very dry
- 2 tablespoons extra virgin olive oil
- 1 large lemon, zested and cut into wedges
- 2 garlic cloves, finely minced
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh dill or oregano
- 1 teaspoon sea salt, plus more to finish
- 1/2 teaspoon black pepper
- Optional: pinch of red pepper flakes for mild heat
Instructions
- Preheat air fryer to 400°F.
- Mix olive oil, lemon zest, garlic, parsley, dill, salt, pepper, and red pepper flakes in a bowl.
- Toss sardines in the mixture to coat and let them sit for 5 to 10 minutes while the fryer heats.
- Arrange sardines in a single layer in the basket. Don’t overcrowd—work in batches if needed.
- Air fry for 6 to 8 minutes, turning once about halfway through until the skin is browned and crisp and the flesh is opaque.
- Transfer to a plate, squeeze fresh lemon juice on top, and finish with a pinch of sea salt and extra herbs if desired.
Notes
Ensure the sardines are patted dry before seasoning for the best crispiness. Don’t overcrowd the air fryer basket to allow for even cooking.
