Description

A fast and flavorful Mediterranean dish featuring creamy feta and blistered tomatoes, perfect as a dip or served over grains.


Ingredients

  • 1 block feta cheese (about 7 to 8 ounces)
  • 2 cups cherry or grape tomatoes
  • 2 tablespoons extra virgin olive oil, plus more for serving
  • 1 to 2 garlic cloves, thinly sliced
  • 1 teaspoon dried oregano or Italian seasoning
  • Red pepper flakes to taste
  • Fresh basil or parsley, chopped
  • Pinch of sugar or drizzle of honey if tomatoes are very tart
  • Lemon wedges for serving
  • Salt and black pepper to taste


Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. In a small, oven-safe dish, add the tomatoes, olive oil, garlic, oregano, and a pinch of salt and pepper. Toss to coat.
  3. Nestle the feta block in the middle and sprinkle with red pepper flakes. If needed, add a tiny pinch of sugar or a light drizzle of honey.
  4. Air fry for 10 to 12 minutes, until the tomatoes are blistered and juicy and the feta is soft with lightly browned edges. For extra color, increase the temperature to 400°F (200°C) for the last 2 minutes.
  5. Carefully remove the dish and stir the tomatoes around the feta. Squeeze lemon over the dish and finish with fresh herbs.

Notes

For best results, use a block of feta cheese. You can customize this dish with various seasonings and additional ingredients like olives or red pepper flakes.
