Delicious and easy zucchini fritters made with just 4 ingredients, perfect as a snack or side dish.
Ingredients
- 2 medium zucchinis, grated and drained
- 1 large egg
- 1/2 cup all-purpose flour (or gluten-free)
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
- Oil for frying
Instructions
- Grate the zucchini and squeeze out the excess moisture using a clean towel or cheesecloth.
- In a bowl, mix the zucchini, egg, flour, Parmesan cheese, salt, and pepper until well combined.
- Heat oil in a skillet over medium heat.
- Scoop 2 tablespoons of batter for each fritter and flatten slightly in the pan.
- Fry for 3-4 minutes per side or until golden and crispy.
- Drain on paper towels and serve warm with your favorite dipping sauce.
Notes
Make sure to squeeze out as much moisture from the zucchini as possible. Adjust seasoning to taste, and feel free to add other ingredients like herbs or spices.
