Ingredients
- 2 cups of pumpkin puree
- 1 cup of vegetable broth
- 1 cup of cooked lentils
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
- Optional: A sprinkle of pumpkin seeds for garnish
Instructions
- In a large pot, combine the pumpkin puree and vegetable broth. Heat over medium heat, stirring occasionally.
- Add the cooked lentils, garlic powder, onion powder, salt, and pepper. Mix well.
- Allow the soup to simmer for about 15 minutes, stirring occasionally.
- Serve hot, garnished with pumpkin seeds if desired.
Notes
For a creamier texture, blend the soup with an immersion blender after it has simmered. Feel free to add other vegetables like carrots or spinach for extra nutrients.
